Tomato French Onion Soup Recipe

Ingredients
  • 4 large sweet onions, peeled and sliced
  • 2 tablespoons butter
  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 2 cups water
  • 1 can beef consomme
  • 1/4 cup dry red wine
  • 4 slices French or Italian bread, toasted
  • Mozzarella cheese, shredded

Directions
  1. In large saucepan, saute onions in butter until softened.
  2. Add tomatoes with liquid, water, consomme and wine.
  3. Bring to a boil, skimming off any "foam" that collects.
  4. Reduce heat and simmer 10 minutes.
  5. Place bread in the bottom of 4 oven-proof bowls.
  6. Ladle soup over bread.
  7. Cover with cheese.
  8. Place soup bowls under broiler until cheese is melted and just slightly browned around the edges.
