How to make it

  • In a heavy pot (preferably a dutch oven) , brown whole chicken on all sides, in butter
  • Add next 7 ingredients, cover and simmer for 1 1/2 hours or until chicken is tender
  • Add olives and green pepper ; cook for another 10 minutes
  • Remove chicken to a hot dish
  • Thicken liquid in pot with cornstarch blended in a little water
  • Season to taste with salt & pepper
  • Pour over chicken
