Vegetable And Smoked Sausage Frittata Recipe
I have not tried this. It comes from an estate sale that I purchased a few years back. It sounds fantastic. Please try and let me know how it is.

Ingredients
  • 5 eggs
  • 2 tablespoons butter
  • 1/4 cup milk
  • 1 small zucchini sliced
  • 2 tablespoons grated oregano leaves
  • 1/2 cup shredded carrots
  • 1/2 teaspoon black pepper
  • 1/3 cup sliced green onions with tops
  • 1 pound beef and pork smoked sausage
  • 3/4 cup shredded Swiss cheese

Directions
  1. Whisk eggs in bowl then stir in milk, Parmesan cheese, oregano and pepper then set aside.
  2. Cook sausage in large skillet over medium heat until browned turning occasionally.
  3. Drain off any drippings then remove sausage from skillet and cut into 1/2" lengths.
  4. Melt butter in same skillet.
  5. Add zucchini, shredded carrots and onions then cook and stir over medium heat until tender.
  6. Top with sausage then Swiss cheese.
  7. Pour egg mixture over vegetable mixture then stir gently to combine.
  8. Cook without stirring over low heat 10 minutes or until center is almost set.
  9. Remove from heat then let stand 5 minutes before cutting into wedges.
  10. Serve hot.
