Caramelised Onions

- 2 large onions (at least) shopping list
- 2 tablespoons oil shopping list
- 1 tablespoon brown sugar shopping list
- Balsamic or red wine vinegar shopping list
How to make it
- Thinly slice the onions, rings or diced, however you like.
- Fry the onions gently in the oil until brown. The slower the better, this can take up to half an hour.
- Add the sugar then slosh in the vinegar, enough to cover the bottom of the frying pan given the mad bubbling that's going on right now. Avoid the steam - its not nice to breathe acid!
- Cook down the vinegar until you have a jammy mess
- Add more vinegar and repeat if you like. If tasting this mixture remember that anything with sugar gets very very hot.
- That's it!
