How to make it

  • Thinly slice the onions, rings or diced, however you like.
  • Fry the onions gently in the oil until brown. The slower the better, this can take up to half an hour.
  • Add the sugar then slosh in the vinegar, enough to cover the bottom of the frying pan given the mad bubbling that's going on right now. Avoid the steam - its not nice to breathe acid!
  • Cook down the vinegar until you have a jammy mess
  • Add more vinegar and repeat if you like. If tasting this mixture remember that anything with sugar gets very very hot.
  • That's it!
