Toffee for adults! Sweet and sour and tangy onion relish. Great with pasta, beans, on a pizza. If you can stop eating it for long enough!

Ingredients
  • 2 large onions (at least)
  • 2 tablespoons oil
  • 1 tablespoon brown sugar
  • Balsamic or Red Wine vinegar

Directions
  1. Thinly slice the onions, rings or diced, however you like.
  2. Fry the onions gently in the oil until brown. The slower the better, this can take up to half an hour.
  3. Add the sugar then slosh in the vinegar, enough to cover the bottom of the frying pan given the mad bubbling that's going on right now. Avoid the steam - its not nice to breathe acid!
  4. Cook down the vinegar until you have a jammy mess
  5. Add more vinegar and repeat if you like. If tasting this mixture remember that anything with sugar gets very very hot.
  6. That's it!
