Bacon And Tomato Quesadilla Recipe
This makes one quesadilla, but is easily multiplied to do several. It can also be used as "finger food" for an appetizer.

Ingredients
  • 3 tablespoons butter, softened
  • 2-10 inch flour tortillas
  • 1/2 cup shredded montery jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1 tomato, diced
  • 1-2 tablespoons chopped onions or scallions
  • 1-2 tablespoons diced jalapeƱos
  • 3 slices bacon, cooked crisp
  • salt and pepper to taste

Directions
  1. In a skillet, cook bacon until crisp. Drain on paper towels.
  2. Heat a skillet, same one wiped out if desired, over medium heat.
  3. Spread 1/2 of the butter onto 1 side of a tortilla.
  4. Place tortilla in skillet, butter-side down.
  5. Spread cheese over top, sprinkle with tomatoes, onion, jalapeƱos, and bacon.
  6. Season with salt and pepper if desired.
  7. Top with remaining tortilla.
  8. Cook for 1-3 minutes, until brown and cheese is melting.
  9. Spread remaining butter onto top tortilla and flip.
  10. Cook until other side turns brown, just about another minute.
  11. Cut into wedges and serve hot.
