Ingredients
  • 2 boneless skinless chicken breasts, cubed large
  • 1 celery rib-sliced
  • 2 carrots-sliced
  • 2 potatoes, peeled and cubed
  • 1 cup frozen or canned corn
  • 1 cup chicken stock or boullion
  • 1-1 1/2 cups water
  • 1-2 tbs white wine worsterchester sauce
  • olive oil
  • Flour
  • salt
  • pepper (lemon pepper works well)
  • garlic powder
  • 1/2 tsp marjoram
  • 2-4 leaves lemon verbena, crushed (lemon zest works well too)

Directions
  1. heat oil in stock pot
  2. add chicken after seasoning with salt, pepper, garlic and dusting heavily with flour cook till brown
  3. add onion, celery and carrot after dredging in flour
  4. add 1 tbs of flour and toast
  5. add stock, stirring up brown bits from pan
  6. add water and worst. sauce
  7. simmer till thickened and potatoes are done
  8. add corn, simmer till heated thru.
  9. serve with crusty bread and a green salad.
