Maple-Glazed Ham with Raisin Sauce

- 1 bone-in ham (shank portion about 5 lb) shopping list
- 2 tbsp whole cloves shopping list
- For the glaze: shopping list
- 1/2 c maple syrup shopping list
- 1 tbsp dark corn syrup shopping list
- 1 tbsp butter shopping list
- 1 tbsp orange juice concentrate shopping list
- 1/4 tsp ground allspice shopping list
- 1/2 tsp cinnamon shopping list
- 1/4 tsp ground cloves shopping list
- For the sauce: shopping list
- 1/4 c packed dark brown sugar shopping list
- 2 tbsp cornstarch shopping list
- 1 1/2 c apple juice shopping list
- 1 c raisins shopping list
- 3 tbsp orange juice shopping list
- 1 tbsp vinegar shopping list
- 2 tsp grated orange rind shopping list
- 1/2 tsp cinnamon shopping list
- 1/4 tsp allspice shopping list
How to make it
- Preheat oven to 325 degrees. Score the top of the ham into diamonds then place one whole clove in each diamond.
- Place ham on a rack in a large baking pan. Cover with foil then bake for about 1 1/4 hours.
- Meanwhile, in a small saucepan combine all glaze ingredients then bring to a boil.
- Boil one minute then remove from heat.
- After ham cooks for an hour and a quarter remove from oven, remove foil then brush with the glaze.
- Return to oven and bake, uncovered, for another 15 minutes to half an hour, continuing to brush glaze on every 10 minutes or so.
- Remove from oven and cover again with foil and let stand about 15 minutes before carving.
- Meanwhile, prepare the sauce. In a medium saucepan combine the brown sugar and cornstarch. stir in the rest of the ingredients and cook over medium heat, stirring constantly until the sauce is thickened. Serve with the ham.
