These are thin, crunchy cookies that go great with a cup of hot coffee! Similar to speculaas but spiced only with cinnamon.

Ingredients
  • 1 c butter, melted
  • 1 c brown sugar
  • 2 c flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • rolled oats (not instant) for sprinkling
  • white sugar for sprinkling

Directions
  1. Combine all ingredients and press into a greased cookie sheet or jelly roll pan.
  2. Sprinkle with rolled oats and sugar then bake at 375 degrees for 15-20 minutes.
  3. Cut into diamonds or squares while still warm as they crisp up quickly.
