These are a lovely appetizer served with a large Greek, Ceasar or garden salad.

Ingredients
  • 1 cup shredded Jarlsberg lite cheese
  • 2 cups cooked, shredded rotisserie chicken
  • 1/3 cup spring onion, thinly sliced
  • 1/4 cup celery, thinly sliced
  • 3/4 cup non-fat Caesar salad dressing
  • 4 cups spinach leaves washed and
  • dried (about 4 ounces)
  • 4 10-inch flour tortillas
  • * Easily doubled ;-)

Directions
  1. Mix Jarlsberg cheese. rotisserie chicken and spring onion in a bowl and toss well with dressing; set aside.
  2. Arrange 1 cup of spinach leaves on one side of a tortilla.
  3. Spoon on 1/4 chicken mixture.
  4. Roll up tightly, tucking in ends.
  5. Repeat to make 4.
  6. Wrap in microwave-safe paper and refrigerate.
  7. Heat in microwave 1-1/2 minutes or until warm.
  8. Slice in half.
  9. Makes 4 wraps
