How to make it

  • COOK CHICKEN, CARROT AND ONION IN OIL UNTIL CHICKEN IS BROWNED. ADD ZUCCHINI, PEAS AND RED PEPPER; COOK AND STIR UNTIL VEGETABLES ARE CRISP TENDER. IN A BOWL COMBINE SUGAR, CORN STARCH, PEPPER, GARLIC, GINGER AND PINEAPPLE JUICE UNTIL SMOOTH. STIR IN THE CATCHUP, LEMON JUICE AND SOY SAUCE. POUR OVER CHICKEN MIXTURE. ADD PINEAPPLE. BRING TO BOIL. COOK AND STIR FOR 2 MINUTES OR UNTIL THICKENED. SERVE OVER WHITE RICE. WORKS JUST AS WELL WITH PORK.
