Whole Wheat Applesauce Pancakes Recipe

Whole Wheat Applesauce Pancakes Recipe
Handy low fat pancake mix. I make the mix in bulk and then have it handy for a quick breakfast / lunch for 1 (or more). Just scale up the recipe. Applesauce adds flavour and replaces oil in recipe

Ingredients
  • The Mix:
  • 2 cups whole wheat flour
  • 1 cup all purpose flour
  • 3 tbsp sugar
  • 2 tbsp baking powder
  • 4-1/2 tsp ground cinnamon
  • 1-1/4 tsp salt
  • The pancakes:
  • 1 cup mix
  • 1 egg
  • 4 tbsp apple sauce
  • Approx 3/4 cup milk

Directions
  1. 1)Sift ingredients of pancake mix into a sealed plastic container. Keeps unrefrigerated for 3 months. Store until needed.
  2. 2)I use a 2 cup measuring cup to make a breakfast for 1. Makes for less cleanup.
  3. 3)Break egg into measuring cup and beat with fork.
  4. 4)Add 4 tbsp applesauce and beat again.
  5. 5)Add enough milk to measure 1 cup of liquid (approx 3/4 cup). Beat again.
  6. 5)Slowly stir in 1 cup of mix with fork. Mix should be a bit stiff, do not over mix.
  7. 6)Pre heat non-stick electric griddle to 300F. Add a small amount of oil. More oil is required if griddle is not non-stick.
  8. 7)Use 2 heaping tbsp of mixture per pancake. Cook 4 pancakes at a time. Swirl skillet immediately after dropping mixture in to slightly spread mixture.
  9. 8)Cook 3 minutes (until bubbles form on top) and flip. Cook for additional 3 minutes on other side.
  10. 9)Serve with favourite toppings.

This sounds really yummy. What a great idea to mix everything in the 2 cup measuring cup. If I didn't have 5 in my family I would definitely try that! In any event, I think I'll be trying out the scaled up recipe for my family this week. Thanks for the recipe!

Very awesome recipe. Great texture, easy to make. I also like that there's extra mix left over for the next time these are made.

This is just GREAT!

Love this recipe! Try substituting 1 cup of wheat germ for one of the wheat flour, and organic sucanat (sugar cane) for the sugar in the mix, then add raisins and roasted nuts to the batter, for a really hearty twist.

I added a bit of vanilla. A nice touch is to also slice some thin wedges from an apple and press them into the cooking pancake. The low heat setting used in this recipe makes sure the apples cook thoroughly but also won't burn. :D I served the pancakes with the leftover applesauce with some cinnamon sprinkled on as a garnish.
