Handy low fat pancake mix. I make the mix in bulk and then have it handy for a quick breakfast / lunch for 1 (or more). Just scale up the recipe. Applesauce adds flavour and replaces oil in recipe

Love this recipe! Try substituting 1 cup of wheat germ for one of the wheat flour, and organic sucanat (sugar cane) for the sugar in the mix, then add raisins and roasted nuts to the batter, for a really hearty twist.

I added a bit of vanilla. A nice touch is to also slice some thin wedges from an apple and press them into the cooking pancake. The low heat setting used in this recipe makes sure the apples cook thoroughly but also won't burn. :D I served the pancakes with the leftover applesauce with some cinnamon sprinkled on as a garnish.
