fillet steak rossini collins style

- 2 8oz fillet steaks trimmed and seasoned wit salt and black pepper shopping list
- 1 x 4oz pkt of supermarket liver pate,if you make your own it is much better shopping list
- 2xlarge mushrooms ,wash clean and remove the stalk,finely chop the stalks for later.this recipe would use truffles rather than mushrooms,but they are expensive shopping list
- finely chop a small onion and fry in butter with the mushroom stalks don`t forget to season to taste shopping list
- hollandaise sauce either make your own or buy it from the supermarket already made shopping list
- copped tarragon or dryed half a teaspoon should be ample shopping list
- chopped parsley shopping list
How to make it
- fry the steaks to your liking
- mix the mushrooms and onions with the pate
- warm the hollandaise carefully in a bowl over hot water,add the tarragon and stir grill the mushroom cups don`t forget to season
- put the steaks on a oven tray pile the pate mix on top,then the mushroom cup face up,in the oven to keep warm
- fresh chunky chips with a nice salad on the plates
- put the steaks on the plates and overflow the mushroom cup with the sauce,sprinkle with chopped parsley.
- people do this dish different,but this is my version.
- this is really rich and tasty but it is best made with beef fillet,however you can use cheaper cuts.i am hungry now.regards twcollins
