Ingredients
  • 2 8oz fillet steaks trimmed and seasoned wit salt and black pepper
  • 1 x 4oz pkt of supermarket liver pate,if you make your own it is much better
  • 2xlarge mushrooms ,wash clean and remove the stalk,finely chop the stalks for later.this recipe would use truffles rather than mushrooms,but they are expensive
  • finely chop a small onion and fry in butter with the mushroom stalks don`t forget to season to taste
  • hollandaise sauce either make your own or buy it from the supermarket already made
  • copped tarragon or dryed half a teaspoon should be ample
  • chopped parsley

Directions
  1. fry the steaks to your liking
  2. mix the mushrooms and onions with the pate
  3. warm the hollandaise carefully in a bowl over hot water,add the tarragon and stir grill the mushroom cups don`t forget to season
  4. put the steaks on a oven tray pile the pate mix on top,then the mushroom cup face up,in the oven to keep warm
  5. fresh chunky chips with a nice salad on the plates
  6. put the steaks on the plates and overflow the mushroom cup with the sauce,sprinkle with chopped parsley.
  7. people do this dish different,but this is my version.
  8. this is really rich and tasty but it is best made with beef fillet,however you can use cheaper cuts.i am hungry now.regards twcollins
