Portuguese Chorizo Omelet Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Henderson Estate in Wills Point, Texas in 1994

Ingredients
  • 8 thin slices of chorizo
  • 3 eggs
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons butter

Directions
  1. Brown chorizo in butter.
  2. Beat eggs with a fork with salt and pepper.
  3. Beat until eggs can pass through fork without sticking to it.
  4. Melt butter in hot frying pan then pour in eggs.
  5. Stir with a fork at the same time shaking pan until eggs start to set.
  6. Add fried chorizo.
  7. When eggs are set fold over and cook until eggs are cooked through.

Add thin slices of a bird's eye chili.


to make it really portuguese (which I am!) also saute diced onions with linguica sausage and add fresh chopped parsley to the eggs :-)
