Opened Faced Sicilian Frittata Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Wade Estate in Dallas, Texas in 1988.

Ingredients
  • 2 potatoes peeled and sliced
  • 2 tablespoons olive oil
  • 1/2 cup chopped red onion
  • 1/4 cup finely chopped green pepper
  • 2 cloves garlic minced
  • 2 cups chopped broccoli
  • 1/4 cup grated parmesan cheese
  • 1/4 cup water
  • 1/2 teaspoon dried basil crushed
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup shredded pepper jack cheese
  • 6 eggs

Directions
  1. In large skillet cook potatoes uncovered in hot oil 10 minutes turning occasionally.
  2. Add onion, green pepper and garlic then cook until onion is tender.
  3. Add broccoli then reduce heat and cook covered for 5 minutes.
  4. Beat together eggs, parmesan, water, basil, salt and pepper then pour over vegetables.
  5. Cook covered over low heat 15 minutes.
  6. Sprinkle with pepper jack cheese and remove from heat.
  7. Cover and let stand 5 minutes.
