Chefs Kentucky Chess Pie Made with Cream

- 2 cups granulated sugar shopping list
- 2 tablespoons stone-ground white cornmeal shopping list
- 2 tablespoons all-purpose flour shopping list
- 3 eggs, beaten to blend (I use wire whisk) shopping list
- 1 cup light cream (I use half and half cream) shopping list
- 1 stick unsalted butter, melted and cooled shopping list
- 1 teaspoon vanilla shopping list
- 1/4 teaspoon salt shopping list
- 1-9 inch partially baked pie shall shopping list
How to make it
- Preheat oven to 425 degrees
- Mix sugar, cornmeal and flour in large bowl
- Stir in "beaten to blend" eggs
- Blend in light cream, butter, vanilla and salt
- Pour filling into pie shell
- Bake 15 minutes
- Reduce oven temperature to 375 degrees and continue baking until puffed and golden, 45-50 minutes
- Cool pie to room temperature before slicing and serving.
- NOTE: If making tarts, just pour into tart shells instead of 9 inch pie crust
