Chefs Kentucky Chess Pie Made With Cream Recipe
EASY. So many recipes for chess pie! This is a favorite. Rich, creamy, velvet smooth. Wonderful at Thanksgiving. Have also used this recipe for tarts. Nice presentation.

Ingredients
  • 2 cups granulated sugar
  • 2 tablespoons stone-ground white cornmeal
  • 2 tablespoons all-purpose flour
  • 3 eggs, beaten to blend (I use wire whisk)
  • 1 cup light cream (I use half and half cream)
  • 1 stick unsalted butter, melted and cooled
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1-9 inch partially baked pie shall

Directions
  1. Preheat oven to 425 degrees
  2. Mix sugar, cornmeal and flour in large bowl
  3. Stir in "beaten to blend" eggs
  4. Blend in light cream, butter, vanilla and salt
  5. Pour filling into pie shell
  6. Bake 15 minutes
  7. Reduce oven temperature to 375 degrees and continue baking until puffed and golden, 45-50 minutes
  8. Cool pie to room temperature before slicing and serving.
  9. NOTE: If making tarts, just pour into tart shells instead of 9 inch pie crust
