Raisin Cake Recipe
Unusually good even for someone who doesn't like raisins. Nice moist cake.

Ingredients
  • 1 1/ 2 cups raisins
  • 3 cups water
  • 1 tsp. baking soda
  • 1 1/2 cups granulated sugar
  • 3/4 cup shortening
  • 3 cups all purpose flour
  • 3 eggs
  • 1/3 tsp. salt
  • 1 1/2 tsp. vanilla

Directions
  1. Boil water and raisins together until water is reduced to 1 1/2 cups.
  2. To cooled raisin water, add baking soda ( Use large container, as it will foam up. Set aside
  3. Beat sugar & shortening until mixed well.
  4. Add eggs and vanilla & beat again.
  5. Add flour & salt, beat until well blended.
  6. Add water and beat again. Stir in raisins.
  7. Grease & flour one 13" X 9" pan or two 9" round pans.
  8. Spread batter into pans and bake in preheated 350° oven for 25-30 minutes or until toothpick inserted into cake comes out clean. Cool on wire racks and frost with vanilla or buttercreme frosting.

How much baking soda? How much baking powder?
I added 1 tsp baking soda and 2 tsp baking poder and got 3 delicious loaf cakes. Easy, quick and delicious. Nellie
