How to make it

  • 1. Pick over beans, rinse well, soak overnight in at least 1 qt. of water
  • 2. Drain beans, rinse thourghly several times and drain again. Place in kettle, cover with 1 qt. of water, bring to a rapid boil, reduce heat to medium, cover and cook for one hour.
  • 3. In skillet heat oil, add garlic,, onions and sweet chilis, saute for 10 minutes.
  • 4. Add 1 C. of boiled black beans that have been mashed to the skillet. Then add the 'skillet mixture' to the beans that have been simmering.
  • 5. Add all the seasonings that are listed to the beans and cover and boil one hour- medium heat.
  • 6. Add vinegar to beans, cover and cook for another hour.
  • 7. After the third hour of cooking is finished uncover and let the beans cook until thickened.
