How to make it

  • Trim stems from artichokes.
  • Lay each on its side and cut off 1” from top.
  • Trim off spiny tips of the leaves with scissors then wash under running water.
  • Stand the artichokes upright in a large saucepan and pour in water to a depth of 1”.
  • Simmer covered for 40 minutes.
  • Combine mayonnaise, mustard and lemon juice until well mixed.
  • Serve artichokes with dip.
