Butterscotch Apple Sponge

- 3 cups of lighty stewed apple shopping list
- 2tbs brown sugar and 1 tsp of cinnamon, mix togeather shopping list
- 1 tsp of vanilla essence shopping list
- 3 eggs shopping list
- 3/4 cup castor sugar shopping list
- 6 tbs self-raising flour shopping list
How to make it
- Preheat oven to 180. Grease 21 cm square oven dish or 6 individual ramekins.
- Mix apple, brown sugar/ cinnamon and essence togeather, stirring to mix thoughly.
- Place in dish or ramekins.
- Beat eggs adding castor sugar slowly until thick and creamy.
- Gently fold in flour. Pour over apples.
- Bake for 45 - 55 min for the larger dish - 25 to 30 mins for the ramekins.
- Dust with icing sugar.
