- colocasia 1/2 kilo [arbi in hindi] boiled and peeled and cut uniformly shopping list
- tamarind - soaked in water and pulped - shopping list
- ginger cut in strips - say, an inch of ginger shopping list
- green chillies - cut in strips -as many or few as you like shopping list
- mustard seeds - 1 tsp shopping list
- asafoetida - a pinch shopping list
- salt - to taste shopping list
- turmeric powder - a tsp shopping list
- red chilly powder - 1 tsp shopping list
- jaggery - 1 tsp shopping list
- curry leaves - about 5 shopping list
How to make it
- heat a couple of spoons of oil[preferably gingelly oil] in a dish
- when it gets hot, add the mustard seeds and curry leaves and let them splutter
- add the ginger and green chillies and let them fry about 1 minute
- add the colocasia - stir it around
- add salt, turmeric and red chilly powder
- once the colocasia is nicely coated,add the tamarind concentrate
- once the tamarind cooks, add some water and let it all thicken
- add some jaggery to bring out all the flavours
- when the consistency is thick, switch it off.
