How to make it

  • heat a couple of spoons of oil[preferably gingelly oil] in a dish
  • when it gets hot, add the mustard seeds and curry leaves and let them splutter
  • add the ginger and green chillies and let them fry about 1 minute
  • add the colocasia - stir it around
  • add salt, turmeric and red chilly powder
  • once the colocasia is nicely coated,add the tamarind concentrate
  • once the tamarind cooks, add some water and let it all thicken
  • add some jaggery to bring out all the flavours
  • when the consistency is thick, switch it off.
  • enjoy!
