How to make it

  • Layer vegetables with salt, and ice in a large bowl. Let sit 3 hours and drain, rinse and drain well.
  • Bring remaining ingredients to a boil, add vegetables and bring to a boil again. Reduce heat, stir once gently but don't boil. Cook until vegetables are transparent (about 20 minutes)
  • Pour into steralized jars, and process in boiling water bath for 15 minutes.
