Black Beans Cuminand Cilantro Recipe
Sometimes you just want a spicy flavor of Mexican food to add to a Mexican themed meal. Goes perfectly with tortilla chips and salsa, as well as chilied chicken

Ingredients
  • Olive oil
  • 1 8oz can of black beans, drained
  • 1 8oz can of kidney beans, drained (or another can of black beans, drained)
  • 1/8th to 1/4th tsp of cumin - to taste
  • salt to taste
  • cilantro to add at the end

Directions
  1. Preheat skillet over medium high heat.
  2. Add about 2 Tbls extra virgin olive oil to pan
  3. When pan is read put the beans in and stir.
  4. Add cumin.
  5. Add salt.
  6. When beans are thoroughly heated through, turn off heat.
  7. Directly after the pan is turned off, add a good amount of cilantro.
  8. I like cilantro, so I add a lot. It gives it a wonderfully cool flavor.
