Chicken Meatloaf Recipe

Ingredients

2 lbs ground chicken

1 egg

1/2 cup grated parmesan cheese

1-1/2 tsp garlic powder

1/4 cup dried chopped onion

1/2 cup Italian bread crumbs

1/2 cup ketchup

1/4 cup honey (or brown sugar)

Directions

Preheat oven to 350.

In a medium bowl, combine ground chicken and egg.

In a separate small bowl, combine cheese, garlic, onion and crumbs.

Add seasoning mixture to the ground chicken. Mix well (I use my hands).

Pat the mixture into a shallow rectangular baking dish. Bake for 40 minutes.

In the meantime, combine ketchup and honey in a small bowl and mix well. During the last 10 minutes of baking time, spread ketchup mixture over the meat.

I don't eat beef but my boyfriend loves it... Meatloaf is his favorite food. I wanted to try and cook him something he'd like and I'd like as well. I just cooked it and I enjoyed it. It might be my oven, but I needed to cook it for 10-15 mins longer than the recipe in order for the ground chicken to be fully cooked. I think next time I might substitute a tomato sauce instead of the ketchup/honey just because I didn't care for it, but the boyfriend loved it (although he might have been just saying that).
