This is a quick and easy recipe for sausage and peppers. It's from a potluck cookbook that was created at my last place of employment.

Ingredients
  • 1 pkg. Knorr tomato with basil soup and recipe mix
  • 1-1/4 c. water
  • 1 T. Mazola corn oil
  • 1 lb. Italian sausage, cut into 2 inch pieces
  • 1 green pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced

Directions
  1. In a bowl, stir soup mix and water until blended; set aside.
  2. In large skillet, heat corn oil over medium-high heat. Add sausage; brown on all sides about 2 minutes. Pour off all but 1 tablespoon drippings.
  3. Add green pepper, onion, and garlic. Cook, stirring, for 2 minutes.
  4. Stir in soup mixture. Stirring constantly, bring to a boil.
  5. Reduce heat to low. Partially cover and simmer 10 minutes.
