Chicken Panini

- 2 boneless skinless chicken breast , cut in half shopping list
- 1 teaspoon dried Italian seasoning shopping list
- 1/2 teaspoon pepper shopping list
- 1/2 teaspoon garlic powder shopping list
- 1/4 teaspoon salt, divided shopping list
- 1 tablespoon olive oil shopping list
- 1/2 cup water shopping list
- 1 1/2 cups red onion, sliced shopping list
- 21/2 cups red bell pepper strips shopping list
- 1/3 cup green onions shopping list
- 10 ounce focaccia bread , cut in half horizontally shopping list
- 1/2 cup shredded sharp chedder cheese shopping list
How to make it
- Lightly coat chicken with cooking spray. Sprinkle chicken with italian seasoning, pepper, garlic powder, and 1/8 teaspoon salt.
- Heat oil in skillet over medium heat. Add chicken, cook until browned on both sides. Reduce heat, add water. cook 10 minutes or until chicken is done. Remove chicken from pan, keep warm.
- Return pan to medium heat. Add red onion, saute 2 minutes. Add red pepper, green onions and remaining 1/8 teaspoon salt, saute until tender.
- Place bottom piece of focaccia bread on panini press or george foreman, top with chicken, onion mixture and sprinkle with sharp cheese. put other slice of focaccia bread on and cook until sides are browned like a grilled cheese sandwich.
- slice into 4 equal portions!
- * if you have no panini press or george foreman you can also put the panini together with top off in the broiler until cheese melts then put top of focaccia bread on and cut in 4 portions.
