Super-Easy Chicken Chili Recipe
Super easy, highly flavorful thick chili-just add sour cream and a side salad and your set!

Ingredients
  • 1.5 pounds Organic boneless, skinless chicken breast
  • 2 cans Organic plain Black beans
  • 1/2 bag frozen corn
  • 2 cups long grain mixed wild rice (any kind of long-cooking rice will work)
  • 3 garlic cloves, smashed and diced
  • 1/3 of a full jar of cumin
  • 3/4 of a full jar of chili powder
  • 1 bunch of fresh cilantro, finely chopped (food processor works great)
  • 2 tbs olive oil
  • Enough water to cover all indredients by 3 inches

Directions
  1. Saute the garlic in the olive oil in a pan on the stove for 2-3 minutes
  2. Using kitchen shears, cut the chicken into 1 inch pieces and add to the garlic
  3. Cook the chicken until done but not browned
  4. Put the cooked chicken and garlic mixture into a food processor and pulse until shredded
  5. Put the shredded chicken, the corn, rice, cumin, chili powder, and DRAINED black beans into a large pot.
  6. Place the washed cilantro into the food processor and pulse until finely chopped. Add to the pot.
  7. Add enough water to cover the ingredients by at least three inches.
  8. Cook over medium-high heat until almost boiling; reduce heat to a low simmer for at least two hours.
  9. Add more water as needed, or to make the chili more soupy.
  10. Serve hot with a dollop of sour cream and fresh cilantro, salsa or guacamole and enjoy!
