How to make it

  • Saute the garlic in the olive oil in a pan on the stove for 2-3 minutes
  • Using kitchen shears, cut the chicken into 1 inch pieces and add to the garlic
  • Cook the chicken until done but not browned
  • Put the cooked chicken and garlic mixture into a food processor and pulse until shredded
  • Put the shredded chicken, the corn, rice, cumin, chili powder, and DRAINED black beans into a large pot.
  • Place the washed cilantro into the food processor and pulse until finely chopped. Add to the pot.
  • Add enough water to cover the ingredients by at least three inches.
  • Cook over medium-high heat until almost boiling; reduce heat to a low simmer for at least two hours.
  • Add more water as needed, or to make the chili more soupy.
  • Serve hot with a dollop of sour cream and fresh cilantro, salsa or guacamole and enjoy!
