Super-Easy Chicken Chili

- 1.5 pounds Organic boneless, skinless chicken breast shopping list
- 2 cans Organic plain black beans shopping list
- 1/2 bag frozen corn shopping list
- 2 cups long grain mixed wild rice (any kind of long-cooking rice will work) shopping list
- 3 garlic cloves, smashed and diced shopping list
- 1/3 of a full jar of cumin shopping list
- 3/4 of a full jar of chili powder shopping list
- 1 bunch of fresh cilantro, finely chopped (food processor works great) shopping list
- 2 tbs olive oil shopping list
- Enough water to cover all indredients by 3 inches shopping list
How to make it
- Saute the garlic in the olive oil in a pan on the stove for 2-3 minutes
- Using kitchen shears, cut the chicken into 1 inch pieces and add to the garlic
- Cook the chicken until done but not browned
- Put the cooked chicken and garlic mixture into a food processor and pulse until shredded
- Put the shredded chicken, the corn, rice, cumin, chili powder, and DRAINED black beans into a large pot.
- Place the washed cilantro into the food processor and pulse until finely chopped. Add to the pot.
- Add enough water to cover the ingredients by at least three inches.
- Cook over medium-high heat until almost boiling; reduce heat to a low simmer for at least two hours.
- Add more water as needed, or to make the chili more soupy.
- Serve hot with a dollop of sour cream and fresh cilantro, salsa or guacamole and enjoy!
