Simple Quiche Recipe
excellent for breakfast or dinner, leftovers, or late night snack; this is the recipe my family knows me for and it gets many requests; serve with a colorful salad or veggie medley

Ingredients
  • 2 deep dish pie shells
  • 1 dozen eggs
  • 1 pkg breakfast sausage
  • 1 pkg "Ready to Serve" bacon (15 slices) (regular bacon is ok to use- but messier and i go for the simpler the better)
  • 16 oz cubed, cooked ham (I buy the cubed salad ham when i can but
  • I usually use the cheap ham lunchmeat and cube it)
  • 16 oz pkg shredded cheddar/monteray jack mixed

Directions
  1. Preheat oven to 425 degrees. Remove pie shells from package and poke holes in bottom of crusts with a fork. Bake for 10 minutes and set aside. Change oven temperature to 375 degrees.
  2. Brown breakfast sausage as you would ground beef and drain.
  3. Microwave bacon and let drain on a plate with paper towels. Dice once its cooled a bit.
  4. Cube ham into about 1/2 inch pieces (if you're using the lunchmeat)
  5. Layer all meats into each pie crusts.
  6. Beat the entire dozen eggs (or 6 at a time if you prefer) and pour over each pie.
  7. Sprinkle cheese over each pie covering all the filling.
  8. Bake for 60 minutes. Insert fork into center and if quiche is still extremely juicy let it cook 15 more minutes. Remove from oven and let cool for 10 minutes before serving. (perfect time to make that colorful salad!)
