How to make it

  • Cook zucchini in a small amount of water for about 10 minutes or until tender. Drain. Put all ingredients except the pie shell in a blender. Blend until smooth. Pour into the unbaked pie shell. Sprinkle the top of the pie with cinnamon and nutmeg. Bake at 400 degrees for 14 minutes and then bake at 350 degrees for 30 minutes. Cool completely before serving.
