If you enjoy the old time sugar cream pie you will definitely enjoy this pie. There just isn't any difference in flavor. My children are insistent on this pie

Ingredients
  • 1 C. Zucchini (seeds removed and chopped)
  • 1 C. Sugar
  • 1 C. Evaporated Milk
  • 1 egg
  • 1 1/2 Tbsp soft margarine
  • 2 Tbsp. Flour
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • Cinnamon
  • Nutmeg
  • 9 inch Unbaked Pie Shell

Directions
  1. Cook zucchini in a small amount of water for about 10 minutes or until tender. Drain. Put all ingredients except the pie shell in a blender. Blend until smooth. Pour into the unbaked pie shell. Sprinkle the top of the pie with cinnamon and nutmeg. Bake at 400 degrees for 14 minutes and then bake at 350 degrees for 30 minutes. Cool completely before serving.
