Ingredients
  • 8 egg yolks
  • 6 oz caster sugar
  • 8 oz plain couvature
  • 2 oz brandy
  • 8 egg whites
  • 2 oz sugar
  • 1/2 pt Double/heavy cream
  • 2oz sugar
  • 1 punnet raspberries or other soft fruit

Directions
  1. cream yolks and sugar together
  2. melt chocolate and mix with brandy
  3. combine egg mix and chocolate mix
  4. whip whites to stiff peak add sugar
  5. fold meringue into choc egg mix
  6. tip mixture into greased and silicone paper lined 9"x12" tray
  7. bake @ 370F until firm
  8. cool a little and turn out onto a tea towel sprinkled with caster sugar
  9. loosen paper and roll up loosely until ready to fill
  10. whip heavy cream and sugar until thick
  11. spread whipped cream onto roulade
  12. sprinkle on berries
  13. roll up and chill before serving
  14. cut with a hot serrated knife(dip in hot water)
