chocolate brandy roulade

- 8 egg yolks shopping list
- 6 oz caster sugar shopping list
- 8 oz plain couvature shopping list
- 2 oz brandy shopping list
- 8 egg whites shopping list
- 2 oz sugar shopping list
- 1/2 pt Double/heavy cream shopping list
- 2oz sugar shopping list
- 1 punnet raspberries or other soft fruit shopping list
How to make it
- cream yolks and sugar together
- melt chocolate and mix with brandy
- combine egg mix and chocolate mix
- whip whites to stiff peak add sugar
- fold meringue into choc egg mix
- tip mixture into greased and silicone paper lined 9"x12" tray
- bake @ 370F until firm
- cool a little and turn out onto a tea towel sprinkled with caster sugar
- loosen paper and roll up loosely until ready to fill
- whip heavy cream and sugar until thick
- spread whipped cream onto roulade
- sprinkle on berries
- roll up and chill before serving
- cut with a hot serrated knife(dip in hot water)
