How to make it

  • cream yolks and sugar together
  • melt chocolate and mix with brandy
  • combine egg mix and chocolate mix
  • whip whites to stiff peak add sugar
  • fold meringue into choc egg mix
  • tip mixture into greased and silicone paper lined 9"x12" tray
  • bake @ 370F until firm
  • cool a little and turn out onto a tea towel sprinkled with caster sugar
  • loosen paper and roll up loosely until ready to fill
  • whip heavy cream and sugar until thick
  • spread whipped cream onto roulade
  • sprinkle on berries
  • roll up and chill before serving
  • cut with a hot serrated knife(dip in hot water)
