How to make it

  • Slice the onion and dice the ham so that you have the fat and lean together. Heat the butter and brown the ham and onion over low heat until the onion is soft and transparent. Add the peas, season with a little salt, pepper and sugar and stir in the bouillon cube or meat extract dissolved in a little water.
  • Cook over a lively heat until the peas are almost done, then add the wine and diced ham. let the wine evaporate and remove from the heat. Cook the vermicelli and drain while nice and firm. Then mix with the peas and serve with plenty of grated Parmesan.
