Menudo Ala Banares Recipe
Pork cubes with potatoes cooked in tomato sauce (and carrots) and cooked to perfection

Ingredients
  • ½ kilo pork kasim or pork pan-menudo (sliced into bite-sized cubes)
  • ½ kilo of pork liver, sliced also into bite sized cubes strips
  • Onion and garlic for sautéing
  • 2 potatoes, diced or cubed
  • 1 red bell pepper, cut into strips
  • ¼ cup Del Monte Original Recipe Ketchup
  • ¼ cup Lee Kum Kee Oyster Sauce
  • 3 tsps. Lee Kum Kee Special Soy Sauce
  • ½ tsp. sugar
  • ½ tsp. instant coffee
  • Salt and pepper to taste
  • ½ cup water

Directions
  1. Wash liver and pork cubes, set aside along with the diced potatoes, bell pepper.
  2. In a wok, sauté onion and garlic in 2-3 tbsps Cooking oil.
  3. Stir in Bell pepper and pork.
  4. Stir fry until pork is semi-brown.
  5. Add in potatoes.
  6. Stir fry for about 5 to 7 minutes or until potatoes are nearly cooked.
  7. Add in liver.
  8. Stir until liver is half-cooked.
  9. Stir in ketchup, oyster sauce and sugar.
  10. Stir well.
  11. Add in coffee.
  12. Stir in water in bring to a boil.
  13. Add salt and pepper for taste.
