Ingredients

How to make it

  • Fill a stewing pot halfway with beef or vegetable stock (about 2 quarts), and bring to a boil.
  • Add the beets, and cook until they have lost their color
  • Add the carrots and potatoes, and cook until tender, about 15 minutes
  • Add the cabbage, and the can of diced tomatoes
  • Heat the oil in a skillet over medium heat
  • Add the onion, and cook until tender
  • Stir in the tomato paste and water until well blended.
  • Transfer to the pot
  • Add the minced garlic to the soup, cover and let simmer for 5 minutes
  • Season with salt, pepper,sugar and dill
  • Ladle into serving bowls, and garnish with sour cream
  • **NB** If you use a slow cooker to make this 1. preheat the stock as this saves heating time 2. pour into slow cooker 3. add everything at once and let simmer away all day
  • ENJOY!

    I can't wait to try this. I've had some mighty fine borsch IN Russia. Where did you get this recipe? Ever had green borsch?

    I have also pureed this and served with sour cream. This blends the flavours even more! Either way is yummy!
