How to make it

  • Rinse fish thoroughly,if fillets are real thick you may want to half them lenghth-wise.
  • Spray baking dish with no-stick spray
  • Arrange fish in dish and sprinkle generously with cajun seasoning.
  • Squeeze lemon over fish and bake 15 minutes @ 350.
  • Remove and top with crawfish sauce and cheese
  • Mince onions,tomatoes, and crayfish. Heat olive oil and 1 tlbs. butter.
  • Add tomatoes and onions, saute until onions wilt.
  • Add crayfish tails,olives celery salt,garlic powder,,bayleaf, and sprinkle with Italian seasoning. cook until tomatoes melt.
