Excellent dish-was originally made with redfish, but since redfish cannot be purchased,snapper works well!

Ingredients
  • 6-8 red snapper fillets
  • 1 lb. crawfish tails
  • 6-roma tomatoes
  • 1 small can black olives
  • 1 lemon
  • 4 tlbs. olive oil
  • 1-2 cups shredded italian cheese
  • 1bunch green onions
  • 1-tlbs. butter
  • cajun seasoning
  • 1-tsp. garlic powder
  • 1/2 tsp. celery salt
  • 1 pinch of ground bay leaf

Directions
  1. Rinse fish thoroughly,if fillets are real thick you may want to half them lenghth-wise.
  2. Spray baking dish with no-stick spray
  3. Arrange fish in dish and sprinkle generously with cajun seasoning.
  4. Squeeze lemon over fish and bake 15 minutes @ 350.
  5. Remove and top with crawfish sauce and cheese
  6. Mince onions,tomatoes, and crayfish. Heat olive oil and 1 tlbs. butter.
  7. Add tomatoes and onions, saute until onions wilt.
  8. Add crayfish tails,olives celery salt,garlic powder,,bayleaf, and sprinkle with Italian seasoning. cook until tomatoes melt.
