Ingredients
  • 4 eggs
  • 1 1/2 cups oil
  • 1 cup honey
  • 1/2 cup sugar
  • 2 cups grated raw squash or pumpkin
  • 2 cups whole wheat pastry flour or white flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 8-ounce can pineapple, well drained
  • 1/2 cup nuts

Directions
  1. Place eggs, oil, honey, and sugar in blender, in that order, and blend until smooth.
  2. Add the squash, a little at a time.
  3. Pour into a large mixing bowl, add all dry ingredients and stir well.
  4. Fold in nuts and pineapple.
  5. Pour into a greased 9- by 13-inch pan.
  6. Bake at 350F. for 35-40 minutes until done.
  7. (Optional: Spread on a mixture of 1/2 cup cream cheese, 1/4 cup butter, and 1/2 cup honey.)
