How to make it

  • Place eggs, oil, honey, and sugar in blender, in that order, and blend until smooth.
  • Add the squash, a little at a time.
  • Pour into a large mixing bowl, add all dry ingredients and stir well.
  • Fold in nuts and pineapple.
  • Pour into a greased 9- by 13-inch pan.
  • Bake at 350F. for 35-40 minutes until done.
  • (Optional: Spread on a mixture of 1/2 cup cream cheese, 1/4 cup butter, and 1/2 cup honey.)
