Beef Caldereta Recipe
A spicy, spanish-inspired dish and is a staple every fiesta. It makes for a tasty viand at home, and it's simple to make.

Ingredients
  • 1- 1 1/2 kilo beef panlaga
  • 1 pack tomato sauce
  • 6 pieces of olives
  • 1 can armour liver spread
  • 1 whole red pepper, sliced juliene style
  • 4 big pieces of tomatoes, halved
  • 3 whole onions
  • 1 whole onion, chopped
  • 7 big cloves of garlic
  • 3 pieces chorizo bilbao
  • 1 tbsp sugar
  • 1/2 cup of vinegar
  • 1 cup of grated parmesan cheese

Directions
  1. Put beef in a pressure cooker, add water and salt and cook until tender. Set aside beef broth for later use.
  2. Remove beef, set aside.
  3. In a pot, sautee garlic, chopped onions, bell peppers.
  4. Add in chorizo, tomatoes and liver spread.
  5. Cook for about 5 minutes.
  6. Add in beef.
  7. Cook until the sauteed mixture mixes with the beef.
  8. Add in olives, vinegar then tomato sauce.
  9. Add in a cup or two of beef stock.
  10. Bring to a simmer.
  11. Add in parmessan cheese and mix until sauce thickens, then throw in whole onions.
  12. Simmer for around 15 to 20 minutes.
  13. Serve with steamed rice.
