Cheese Ravioli With Toasted Walnuts Recipe
I found this recipe in Real Simple Magazine this week. It is so easy and very tastey. I served it with a large field green salad. The walnuts are a great source of Omega 3 fatty acids.

Ingredients
  • One 14- 16 ounce package cheese ravioli ( I used the fresh ones)
  • 1/3 cup olive oil
  • 1 clove garlic sliced (I used two large cloves)
  • 1 cup walnuts roughly chopped ( I will decrease this next time)
  • 2 teaspoons lemon juice
  • 1/2 teaspoon Kosher salt and 1/4 teaspoon pepper
  • 1/2 cup flat leaf parsley chopped
  • 1/4 cup parmesan

Directions
  1. Cook ravioli according to package,
  2. Drain and reserve 3 tablespoons of cooking water
  3. Meanwhile heat oil in skillet over medium heat.
  4. Add garlic and walnuts, cook stirring about 5 minutes until fragrant
  5. Stir inl lemon juice, salt and pepper, parsley and cooking water
  6. Add ravioli and toss to coat
  7. Plate and sprinkle with Parmesan
