  • Eggplant
  • Tomatoes
  • Onion
  • Bell pepper
  • Potatoes
  • Garlic
  • Cilantro (fresh)
  • Italian Parsley
  • Basil

Directions
  1. Take of the eggplant and potatoes skin,chop tomatoes,bell pepper,onion.
  2. In hot deep pan add oil of your choice
  3. Layer all vegetables, tomatoes will be the last layer.
  4. Add salt,pepper, herbs and let this simmer over mid heat for
  5. 30-40 min.
  6. Check after 20 min. Make shure temp is not too hight.
  7. Do not add any water.
  8. Enjoy!
