How to make it

  • Brown onion and garlic in oil
  • add tomatoes and tom paste
  • gently simmer for about 20 min ish
  • Meantime take the aubergine by the stem and burn directly in a gas flame
  • you will see the purple skin blacken
  • keep turning it in the flame until it is all charred
  • gently rinse under cold water until all you have is the good bit
  • slice all the veg into long strips gently fry in griddle pan with small amount of olive oil sprinkle liberally with chillies and black pepper
  • salt to taste
  • when veg are done lay in dish
  • pour over the tomato
  • poke a fork into a clove of garlic and whisk around in the yogurt add salt if you like
  • pour this over the top of the tomato
  • enjoy
