Turkish Fried Veg With Yoghurt Topping

- The Veg shopping list
- 2 large aubergine shopping list
- 3 peppers shopping list
- dried chillies -fresh chillies shopping list
- 3-4 zucchini shopping list
- The tomato Middle shopping list
- tin of tomatoes or fresh shopping list
- good squeeze of tomato paste shopping list
- 1 onion, chopped shopping list
- dried chilies to taste shopping list
- garlic shopping list
- olive oil for lightly frying shopping list
- salt and fresh ground black pepper to taste shopping list
- yogurt topping shopping list
- 3-400ml of yogurt shopping list
- 1 clove garlic shopping list
How to make it
- Brown onion and garlic in oil
- add tomatoes and tom paste
- gently simmer for about 20 min ish
- Meantime take the aubergine by the stem and burn directly in a gas flame
- you will see the purple skin blacken
- keep turning it in the flame until it is all charred
- gently rinse under cold water until all you have is the good bit
- slice all the veg into long strips gently fry in griddle pan with small amount of olive oil sprinkle liberally with chillies and black pepper
- salt to taste
- when veg are done lay in dish
- pour over the tomato
- poke a fork into a clove of garlic and whisk around in the yogurt add salt if you like
- pour this over the top of the tomato
- enjoy
