How to make it

  • Prepare ramen noodles according to package directions reserving flavor packets for dressing
  • drain and cool noodles
  • cut noodles into bite size pieces
  • in a large bowl combine the spinach, cooked chicken, grapes, diced red pepper, cashews, cheese and noodles
  • in a small bowl combine flavor packets, garlic, and lemon juice
  • let stand for 15 minutes
  • add oil and mayonnaise and wisk until smooth
  • pour dressing over salad toss to mix well
  • granish with red pepper rings
