How to make it

  • Saute onions in butter or margarine over medium heat in your soup pot until tender but not brown
  • add flour and let brown stirring constantly
  • add all of the liquids
  • use a pastry blender to coarsely mash the baked potatoes
  • add the potatoes and all remaining ingredients except the chives to the pot
  • heat over medium low heat but do not allow to boil stirring occasionally to blend in the instant potatoes and prevent scorching
  • garnish with the chives just before serving
