Mexicali Meat Loaf With Black Bean And Corn Side

- 1 lb lean ground beef shopping list
- 1 C bread crumbs shopping list
- 1/4 C chili sauce shopping list
- 1/4 C chopped fresh cilantro shopping list
- 2 large eggs shopping list
- 1 med. onion sliced shopping list
- 2 roasted or sauteed red peppers, halved (I have used green and they are fine) shopping list
- 4 jalapenos shopping list
- 2 C frozen corn shopping list
- 2 C canned black beans, drained and rinsed shopping list
How to make it
- Preheat oven to 350.
- In a large bow, combine beef, crumbs, chili sauce, cilantro and eggs.
- Mix well.
- Spray a medium nonstick skillet with cooking spray.
- Add onion and cook until golden, about 10 minutes
- On a sheet of waxed paper, shape beef mixture into a 7x4 inch rectangle.
- Press red peppers on top.
- Spoon onion over red peppers.
- Arrange jalapenos down the center.
- Roll from the long side jelly roll style.
- Place seam-side down, in 9x5 inch loaf pan.
- Buke until cooked through - about an hour.
- Let stand for 10 minutes.
- Meanwhile in saucepan over med. heat, cook corn and beans for 5 minutes.
- Spoon corn and beans onto serving platter.
- Place meatloaf in center.
- Serve immediately - Enjoy!
