My family has never been a fan of meatloaf. But when I tried this off a Healthy meals card I received as a sample in the mail - it was a real winner! Requested quite often!

Ingredients
  • 1 lb lean ground beef
  • 1 C bread crumbs
  • 1/4 C chili sauce
  • 1/4 C chopped fresh cilantro
  • 2 large eggs
  • 1 med. onion sliced
  • 2 roasted or sauteed red peppers, halved (I have used green and they are fine)
  • 4 jalapenos
  • 2 C frozen corn
  • 2 C canned black beans, drained and rinsed

Directions
  1. Preheat oven to 350.
  2. In a large bow, combine beef, crumbs, chili sauce, cilantro and eggs.
  3. Mix well.
  4. Spray a medium nonstick skillet with cooking spray.
  5. Add onion and cook until golden, about 10 minutes
  6. On a sheet of waxed paper, shape beef mixture into a 7x4 inch rectangle.
  7. Press red peppers on top.
  8. Spoon onion over red peppers.
  9. Arrange jalapenos down the center.
  10. Roll from the long side jelly roll style.
  11. Place seam-side down, in 9x5 inch loaf pan.
  12. Buke until cooked through - about an hour.
  13. Let stand for 10 minutes.
  14. Meanwhile in saucepan over med. heat, cook corn and beans for 5 minutes.
  15. Spoon corn and beans onto serving platter.
  16. Place meatloaf in center.
  17. Serve immediately - Enjoy!

Sounds good.. meatloaf isn't a big here either so I will give this a try
