Grouper Fillets Baked With Mushrooms Recipe
This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Duncan Estate in Mesquite, Texas in 1997.

Ingredients
  • Olive oil spray
  • 3/4 pound grouper fillets
  • 1 teaspoon olive oil
  • 4 ounces sliced mushrooms
  • 1 tablespoon chopped fresh thyme
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1/4 cup white wine

Directions
  1. Preheat the oven to 450.
  2. Line baking tray with foil and spray with olive oil spray.
  3. Place tray in the oven while oven preheats.
  4. Rinse fish and pat dry.
  5. Remove tray from oven and place fish on it.
  6. Brush fillets with olive oil then spoon mushrooms over top.
  7. Sprinkle with thyme, salt and pepper.
  8. Pour wine over fish and cover tray with foil then bake 10 minutes.
  9. Place fish on plates and spoon mushrooms and sauce over top.
