Big Shrimp Omelet Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Frye Estate in Waxahachie, Texas in 1990.

Ingredients
  • 6 eggs
  • 1 tablespoon butter melted
  • 1 tablespoon finely chopped green onion
  • 1 teaspoon finely chopped parsley
  • 1/3 cup butter
  • 1/4 pound peeled cleaned freshly boiled small shrimp
  • 1/2 teaspoon freshly ground black pepper
  • 1 green onion finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic salt

Directions
  1. In medium bowl beat eggs thoroughly then add butter and onions.
  2. Add parsley and mix lightly.
  3. In warmed cast iron frying pan combine 1/3 cup butter and egg mixture.
  4. Increase heat slightly and roll mixture as it cooks.
  5. Roll mixture over then decrease heat and continue to cook.
  6. As the softness disappears add shrimp, pepper, green onion, salt and garlic salt.
