Rollets Vegetarians - Vegetable Rolls

- 8 pieces ready made flour tortillas shopping list
- 10 pieces asparagus, cut into 2-inch pieces shopping list
- 1 medium potato cut into strips shopping list
- 1 medium carrot cut into strips shopping list
- 1 small red onion, chopped shopping list
- 1 can mushroom in oil (180 g) shopping list
- 2 teaspoons olive or vegetable oil shopping list
- salt and pepper to taste shopping list
How to make it
- Heat 1 inch water to boiling in skillet. Add potato and asparagus. Heat to boiling; reduce heat to medium. Cook 3 to 5 minutes or until stalk ends are crisp-tender; drain set aside.
- Using the same skillet. Heat oil over medium heat. Cook onion in oil 2 to 3 minutes, stirring occasionally, until tender. Stir in carrots, potato and asparagus. Add salt and pepper to taste. Cook 1 minute, stirring occasionally. Remove mixture from heat; keep warm.
- Brown tortillas in pre-heated pan until a few light brown spots should appear. Roll up tortillas to enclose filling.
- Serve warm.
