How to make it

  • Heat 1 inch water to boiling in skillet. Add potato and asparagus. Heat to boiling; reduce heat to medium. Cook 3 to 5 minutes or until stalk ends are crisp-tender; drain set aside.
  • Using the same skillet. Heat oil over medium heat. Cook onion in oil 2 to 3 minutes, stirring occasionally, until tender. Stir in carrots, potato and asparagus. Add salt and pepper to taste. Cook 1 minute, stirring occasionally. Remove mixture from heat; keep warm.
  • Brown tortillas in pre-heated pan until a few light brown spots should appear. Roll up tortillas to enclose filling.
  • Serve warm.
