super easy beef stew

This is the easiest recipe I have ever done I think....and came out wonderful...I served it with cornbread to sop up the soup...Very hearty, and Tons of veggies.
Ingredients
- 2 pounds beef stew meat ( I used 1 Lb stew meat, and 1 Lb. Browned and drained ground beef) shopping list
- 46 ounces V8 juice shopping list
- 30 ounces frozen mixed vegetables shopping list
- 2 med. potatoes thoroughly scrubbed and cubed shopping list
- salt and pepper to taste shopping list
How to make it
- Combine beef, potato, and vegetable juice in crock pot.
- Cover; cook on low for 6-7 hours.
- Stir in frozen veggies and cook for 1-2 hours longer.
- salt and pepper as desired and enjoy!
