Honey Maple Mac Nuts Recipe

How to make it

  • Combine ingredients, except nuts, in a large pot.
  • Bring to a boil over medium heat and cook until mixture thickens. Remove from heat, then beat until soft and creamy.
  • Add nuts; mix well to coat.
  • Spread on wax paper and allow to harden.

    I've made this recipe several times and never had an issue with it being "sticky and messy." This cooks like caramel. Using a wooden spoon to beat the thickened mixture might be useful. Also, someone commented on how difficult it was to remove the stickiness from their pot. If you are familiar with cooking recipes with a sugar base (the maple syrup and honey), you would know that letting your pot soak for several minutes will help dissolve any sugar stuck to the pot. A suggestion would be to watch your heat and make sure you don't burn the candy before it thickens or after.

    I was very disappointed in this recipe. I let the mixture attempt to thicken for over 20 minutes, before I beat it, then added the nuts.

    The coating is so sticky that the nuts can't be removed from the wax paper, without the wax paper tearing and sticking to the nuts.

    It addition to being extremely messy and sticky, it took a lot of very hot water and elbow grease to remove the sticky mess from the pot and spoons.

    I would not recommend this recipe. Macadamia nuts are too expensive to waste on this sticky mess.
