This recipe is one of hundreds from cookie exchanges I have hosted over the years. It was submitted in last year's cookie exchange by my friend Brenda who is an awesome baker. Enjoy

Ingredients
  • 1/3 cup peanut oil
  • 3 large bananas mashed
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 1-1/2 cups rolled oats
  • 1/2 cup oat bran for hot cereal
  • 1-1/2 cups chopped mixed fruits (raisins, dates, apricots, peaches, etc.)
  • 3/4 cup chopped nuts

Directions
  1. Mix peanut oil to mashed bananas then add vanilla and salt.
  2. Stir in rolled oats, oat bran, chopped mixed dried fruits and chopped nuts.
  3. Drop by rounded tablespoon onto greased cookie sheets and flatten slightly.
  4. Bake at 350 for 25 minutes then cool on wire rack.
  5. Store in tightly closed container in refrigerator.
