How to make it

  • Place eggs in a bowl and set aside
  • place bread crumbs in small bowl and set aside
  • dip slices of eggplant in egg then roll in bread crumbs
  • fry in pan until tender and golden brown
  • place on paper towel lined plate to drain excess grease
  • let cool
  • Line a 13"x9" baking dish with 1/2 jar of spaghetti sauce
  • put ricotta cheese on half of slice and fold other half over(to look like a folded sandwich)
  • place the eggplant in the dish with folded side down in rows
  • continue this until pan is full and eggplant is all used
  • cover with remaining sauce
  • and sprinkle with mozzarella cheese
  • place in oven and bake until cheese is bubbly and golden
