Ingredients
  • 2-3 Med to large eggplant, peeled,sliced and soaked overnight
  • 1 jar spaghetti sauce
  • 1 large container ricotta cheese
  • bread crumbs
  • eggs
  • mozzarella cheese ,shredded

Directions
  1. Place eggs in a bowl and set aside
  2. place bread crumbs in small bowl and set aside
  3. dip slices of eggplant in egg then roll in bread crumbs
  4. fry in pan until tender and golden brown
  5. place on paper towel lined plate to drain excess grease
  6. let cool
  7. Line a 13"x9" baking dish with 1/2 jar of spaghetti sauce
  8. put ricotta cheese on half of slice and fold other half over(to look like a folded sandwich)
  9. place the eggplant in the dish with folded side down in rows
  10. continue this until pan is full and eggplant is all used
  11. cover with remaining sauce
  12. and sprinkle with mozzarella cheese
  13. place in oven and bake until cheese is bubbly and golden
