Black-eyed Pea Dip Recipe
This is a great dip alternative for parties. Served with tortilla chips or corn chips. I take it to all bring-a-dish gatherings, I never bring home leftovers! Easy, make-the-night-before dish with no cooking!

Ingredients
  • 2 cans black-eyed peas, drained
  • 2/3 cup vegetable oil
  • 5 Tbsp red wine vinegar
  • 1 large white onion, chopped
  • 1 green bell pepper, chopped
  • 2 large cloves garlic, chopped, minced or crushed
  • 2 tsp basil
  • 1 tsp oregano
  • 1/2 tsp dry mustard
  • Fresh cracked black pepper to taste
  • Dash red pepper

Directions
  1. Combine all indregients.
  2. Cover and refrigerate overnight. You may serve immediately but it's best to marinate overnight for best flavor.

You many substitute 1 can of black beans for 1 can of black-eyed peas.


1 bottle of zest italian salad dressing may be substituted for the oil & vinegar.
