Ingredients
  • 1/2 pound roasted and salted macadamia nuts
  • 1-1/2 cups flour divided
  • 1 egg
  • 3/4 cup whole milk
  • 6 mahi mahi fillets
  • 2 tablespoons butter
  • 1/2 cup white wine
  • 8 ounces crushed pineapple drained and juice reserved
  • 1/2 cup whipping cream
  • 1 cup cold butter cut into chunks

Directions
  1. In food processor combine nuts and 3/4 cup flour.
  2. Process until nuts are chopped medium to fine.
  3. Make egg wash by beating together egg and milk.
  4. Dust fillets with remaining flour then dip into egg wash then in the nut mixture.
  5. Preheat oven to 350.
  6. Saute fillets in butter top side first until golden.
  7. Turn fillets and saute another 2 minutes to brown other side.
  8. Transfer to baking pan and finish cooking in preheated oven 15 minutes.
  9. In medium pan combine wine, juice from canned pineapple and cream.
  10. Cook over low heat until mixture thickens to coat back of spoon stirring constantly.
  11. This should take about 10 minutes.
  12. Whisk in cold butter and stir until melted.
  13. Add reserved pineapple and heat through.
  14. Divide pineapple sauce among 6 plates.
  15. Put 1 fillet over sauce on each plate.
